Sunday Soup Night

 

There is something so deeply satisfying about a nourishing soup when the weather is cold and the days are short.

We have a family tradition of Sunday Soup Night during the winter months, and while there are many variations on squash soup, this one in particular always has us coming back for more.

Made in a base of bone broth and coconut milk, this grounding, anti-inflammatory meal not only nourishes the gut and soothes the digestive tract, it also stabilizes energy levels for hours.

Feel free to get creative with your garnishes. This soup is a great blank canvas. I sometimes top it with olive oil and fresh herbs, like parsley or thyme. Other times I'm in the mood for a little more spice and love a pinch of red chili flakes.
